Tomato Recipes

If you’ve tried your hand at growing tomatoe, then you know just how delicious these home grown vegetables can be. Here are a few things you can do with your fresh tomatoes and this article is going to share a few good tomato recipes with you. Below are four very good recipes that hardly take any time at all. You’ve already got the main ingredients. All you need are the additions to go with them. These are pretty simple tomato recipes and no matter how tired you may be after working all day, you’ll have these dishes prepared and in your comfy slippers before you know it.



Tomato Soup

Ingredients:

• 1 and ½ lbs of ripe tomatoes skinned and chopped into chunks.
• 1 onion finely chopped
• 1 clove of garlic- crushed
• 2 ounces of melted butter
• ½ pint of beef stock
• ¼ pint heavy cream
• Powdered sugar (to taste)
• Baking soda (pinch)
• Salt & Pepper (to taste)

Preparation—In a heavy sauce pan, melt butter and fry onions & garlic together until soft. Add stock and tomatoes with a good pinch of baking soda, bring to a boil, lower heat, cover and simmer for 15 minutes. Allow this to cool for a couple of minutes and drain through a sieve. Use same pan, re-heat until desired consistency and season to taste with salt, pepper and sugar. Microwave cream on high for about one minuet then add to soup, make sure cream is hot but not boiling when adding to soup. Serve immediately.

Preparation and cooking time, 30 minutes.

Fried Green Tomatoes:

• 4 medium tomatoes
• 1 egg
• ¼ cup milk
• Olive oil
• Bread crumbs
Wash tomatoes and cut into thick slices, sprinkle with salt, pepper and sugar then roll slices in bread crumbs.
Beat egg, add milk, and then dip slices into mixture. Roll again in bread crumbs and fry in olive oil for about one minuet or until brown.

Pork Chops with Tomatoes & Apples:

• 4 good size pork chops
• 3 sliced tomatoes
• 3 peeled, cored and sliced apples
• 1 tablespoon of butter
• Salt & Pepper to taste

Season pork chops and then cook in butter for about 15 minutes.
Mix apples and tomatoes together, season to taste then pour over top of pork chops in pan and put pan in a 350 degree oven for about 15 minutes, serve.

Chicken with Celery & Tomatoes:

• 2 chickens cut in half
• 1 stalk of celery, washed and cut into chunks
• 1 onion, peeled and sliced
• 4 tomatoes, sliced
• 1 tablespoon of butter
• 2 cups of water
• Season to taste

Place all ingredients in a large pot, cover and cook slowly for 35 minutes, serve.
